Dill
Dill is widely used as flavoring. Immature fruit is used to flavor bread and tea. The leaves and young stems are suitable for pickling vegetables, cooking and canning pickles. Young shoots are pickled for the winter. The ether oil is used in the confectionery industry and soap making. Medicinal raw materials are the stems, leaves, blossoms and fruit. All parts of the plant contain ether oil. Fruits and stems are especially rich of fruits. In fennel oil carvone, phellandrene, diallopiol, terpinen and other substances are found. Dill is rich in fatty oil, which is based onglycerides of palmitic, oleic and linoleic acids. Along with the oil it contains a lot of vitamins C, B2 and B6, folic acid and nicotine and substances from the group flavonoid - rutin, quercetin, kaempferol, calcium, potassium, iron and phosphorus.
