Root - is vegetables, which’s thickened taproot is edible. It is represented by carrots, beets, radishes and other crops and vegetables and are conditionally divided into types of carrots, beets type and the type of radish. Nutritional value root crops is due to high content of components: nitrogen compounds from 0.4% (turnips) to 3.5% (beet), vitamin C - from 0.2 mg% (radish) to 60 mg% (turnip), carbohydrates (6-9 % of carrot and table beet), minerals (0,7-1,0%), vitamins, cellulose (0.5-2%). Sugar beets contain significant amounts of sugar (sucrose 9%), minerals (salts of phosphorus, calcium, magnesium, iron, cobalt), pectin, vitamins C, B, PP.
Carrots are a valuable food product, because it has a complex of vitamins: C, B1, B2, B6, B12, D, E, K, P, PP, pantothenic and folic acid, a large amount of carotene (9 mg%), the content of which depends on its color, and biologically active substances - volatile, mineral salt (cobalt, potassium, iron, copper, phosphorus, calcium, iodine, bromine, etc.)., enzymes, polysaccharides (pectin, cellulose), a lot of sugars (up to 15 %), which are easily digested, organic acids, flavonoids, essential oils that contribute to a specific flavor of carrots.
Radish – is a root with bitter-spicy taste and specific smell caused by essential oils and glycosides. It contains sugar (6%), vitamin C, a lot of potassium salts. Root endures many nutrients and is very sensitive for the foliar fertilizing. Special demand they feel to deficit of magnesium (Mg), manganese (Mn) and boron (B). Moreover, in woodlands and in eastern regions of forest-steppe, it is included copper, cobalt and zinc fertilizers under the roots. For the formation of 1 t of roots and appropriate number of tops from 1 ha of soil a lot of calcium, magnesium (Mg) - 1,5-2,0 kg, sulfur, manganese (Mn) - 0,015-0,02 kg, boron (B) - 0.01 kg and other microelements are taken out.
